Coconut Flour Keto Cookie Bars

YIELD: 6 Cookie Bars


INGREDIENTS:

  • 1/2 cup coconut almond butter (or favorite nut butter)

  • 2 pasture-raised eggs

  • 1/2 cup of grass-fed butter

  • 1/3 cup of monk fruit

  • 1 tsp of vanilla extract

  • 1/4 cup of coconut flour

  • 1 tsp of baking powder

  • 1/2 cup of chocolate chips

INSTRUCTIONS:

  1. Preheat oven to 350.

  2. Blend softened butter and nut butter until smooth.

  3. Add sweetener, eggs, and vanilla and blend until combined.

  4. Add the coconut flour and baking powder and blend until the ingredients are well mixed.

  5. Add the chocolate chips and stir through.

  6. Pour the mixture into a lined square pan, 8 inch will work.

  7. Place in the oven for 20 minutes.
