Cottage Cheese, Blueberries and Spinach Salad

Time: 5 minutes
Ingredients:
1 cup arugula
1 cup baby spinach
1/2 cup non fat or low fat cottage cheese
1/3 cup fresh blueberries
1 tablespoon pumpkin seeds
1 tablespoon walnut pieces
2 teaspoons extra-virgin olive oil
1 teaspoon balsamic vinegar
salt & pepper to taste
Instructions:
Gather and prep your ingredients.
In a bowl or on a plate, layer the arugula and spinach.
Top with cottage cheese and blueberries. Sprinkle with pumpkin seeds and walnuts.
Drizzle with olive oil and balsamic vinegar. Season to taste with salt and pepper.
