Baked Apple Oatmeal

Time: 55 minutes



Yield: 6 servings


Ingredients:

  • 2 large Honeycrisp apples, peeled and cored

  • 1 1/2 cups whole milk

  • 1/2 cup unsweetened applesauce

  • 1/4 cup pure maple syrup

  • 2 1/2 cups old-fashioned rolled oats

  • 2 tablespoons ground flaxseed

  • 1 tablespoon canola oil

  • 1 1/2 teaspoons ground cinnamon

  • 1 teaspoon vanilla extract

  • 1 teaspoon baking soda

  • 1/8 teaspoon ground nutmeg

Instructions:

  1. Preheat oven to 350°F. Lightly coat a 7-by-11-inch baking dish with cooking spray. Chop apples into bite-size pieces to equal 2 cups. Slice the remaining apple into 1/4-inch-thick half-moons.

  2. Whisk milk, applesauce and maple syrup together in a large bowl until well blended. Fold in the chopped apples, oats, flaxseed, oil, cinnamon, vanilla, baking soda and nutmeg until well combined.

  3. Transfer the mixture to the prepared baking dish; arrange the sliced apples decoratively over the top. Bake until golden on top and the apples are tender, 40 to 45 minutes.
