Grilled Pineapple Salad

This Grilled Pineapple Avocado Salad is a healthy side dish or vegetarian dinner made on the grill this summer. With caramelized pineapple, blueberries, avocado, pistachios and a homemade pineapple white balsamic vinaigrette, this refreshing salad is bursting with flavor and fresh ingredients.
Grilled Pineapple Salad

Time: 4 minutes


Ingredients:

  • 4 cups mixed greens

  • 1 large avocado

  • 1/4 whole pineapple roughly 2 cups

  • 1/3 cup blueberries

  • 1/4 cup shelled pistachios

  • 1/2 cup pineapple white balsamic dressing*


Instructions:

Grilling Pineapple

  1. Preheat your grill to medium-high heat.

  2. Cut off the top and bottom of the pineapple, and then remove the skin by slicing down the sides of the pineapple with a sharp knife. Cut the pineapple lengthwise into 4 quarter and slice off the core from each piece. Cut the pineapple into 1/2 inch thick slices.

  3. Brush each slice of pineapple with a little bit of oil and place the pineapple slices on the grill. Cook for about 3-5 minutes on each side, or until grill marks appear.

  4. Remove the pineapple slices from the grill and let them cool for a few minutes before serving.

Pineapple Avocado Salad

  1. While your pineapple is grilling, assemble your salad by adding mixed greens, fresh blueberries and pistachios to a large salad bowl.

  2. Top with the pineapple that has cooled for a few minutes and dress with homemade pineapple vinaigrette. Enjoy!
