Superfood Chocolate Bark

YIELD: 6 servings

INGREDIENTS:

  • 1/2 cup vegan chocolate chips or 3/4 Bar 70%+ dark chocolate, chopped

  • 2 tsp. coconut oil

  • 1 banana, diced

  • 1/4 cup frozen or fresh blueberries

  • 1 tsp. hemp seeds

  • 1 tsp. chia seeds

  • 1 tsp. unsweetened shredded coconut

  • 1/4 tsp. kelp granules (optional)

  • pinch of sea salt


INSTRUCTIONS:

  1. On a parchment-lined baking sheet, scatter the diced banana and blueberries in a single layer.

  2. Meanwhile, melt chocolate chips and coconut oil over low heat in a small pot.

  3. Once melted, drizzle evenly over fruit. Quickly, before it hardens, scatter on hemp, chia, coconut, kelp, and sea salt.

  4. Freeze for 1 hour, break into clusters, and enjoy. Store leftovers in the freezer.
